Storia di una intuizione che diventa impresa, di una industria della carne che finanzia le proteine vegetali sue antagoniste, di un mondo che non può reggere un sistema alimentare basato su consumi crescenti di carne e dei suoi derivati, la cui produzione è il maggiore responsabile del consumo di suolo e di acqua ed è la fonte del 14% delle emissioni globali di CO2. È già attuale il riequilibrio delle nostre diete, dove avranno un ruolo crescente le proteine vegetali e quelle che i progressi scientifici nella fermentazione e nella coltivazione cellulare ci metteranno a disposizione. Una trasformazione che avrà implicazioni enormi sulle migliaia di miliardi di affari delle industrie delle carni e dei latticini che difenderanno i loro interessi in tutti i modi possibili. Ma questa rivoluzione è ormai ineludibile.

MICHELE MORGANTE Professore di Genetica all'Università di Udine, accademico dei Lincei, presidente della Associazione Genetica Italiana ed editore associato di prestigiose riviste scientifiche. È direttore scientifico dell'Istituto di Genomica applicata. Ha pubblicato I semi del futuro. Dieci lezioni di genetica delle piante (Il Mulino 2020). È membro del comitato scientifico di vicino/lontano.

MARCO PANARA Giornalista economico, già corrispondente dall’Estremo Oriente per La Repubblica, di cui ha coordinato l’inserto Affari & Finanza. Ha insegnato alla Facoltà di Scienze Politiche dell’Università Orientale di Napoli. Tra le sue pubblicazioni: La Malattia dell’Occidente – Perché il lavoro non vale più (Laterza 2010); La rivoluzione dell’hamburger, dalla carne al vegetale. Il caso Kioene (Post Editori 2023).
